DIRECTIONS

1.

For the UHF Twinkie Weiner Sandwich

Remove a solo twinkie from its plastic wrapping. Turn upside down and cut down the middle.

Place a hot dog in the middle of the sliced twinkie.

Finally, top the hot dog with spray cheese. That’s it.

For the Gourmet Twinkie Weiner Sandwich

1.

Into a large mixing bowl goes all-purpose flour, baking powder, kosher salt, finely grated parmesan cheese, and coarse ground corn meal.

Toss together by hand, making sure everything is distributed evenly and there are no cheese clumps.

In a large stand mixing bowl, add the whites of large eggs. Put the yolks are into a small separate bowl.

Beat the egg whites using a stand mixer with a wire whisk on high speed. As it becomes puffy and white, slowly add in granulated sugar. Once the egg whites have developed stiff peaks, set to the side.

In the dry ingredients bowl, add in the egg yolks along with melted butter mixed together with whole milk. Whisk together thoroughly until very smooth before adding the egg whites and gently folding into the batter. Do not over mix the egg whites, or they will deflate.

Pour batter directly into the twinkie molds all the way up to the brim and smooth out the top.

Place the twinkie batter into a preheated 350°F oven for 30-45 minutes until deeply brown. When you insert a toothpick in the center, it should emerge clean. Place on a wire rack to cool completely.

Once the twinkie has cooled, place 4-5 small holes/nozzles into the center of the twinkie before inserting the cream cheese filling via a piping bag.

Once filled, make a cut down the top of the twinkie and place the hot dog (or spicy chorizo sausage) in the just-sliced twinkie.

Top with the spray cheese. Serve and enjoy!

For the Cream Cheese Filling

1.

Beat room temperature cream cheese in the bowl of a stand mixer along with half & half, scraping down the sides making sure everything is whipped together.

Place into a piping bag, set aside until ready to use.

3.

For the Homemade Spray Cheese

1.

Into a medium ball goes heavy cream, Colman's hot mustard, and cheddar cheese powder. Mix together and add more if necessary until it tastes good and resembles the color of spray cheese.

Pour into a whipped cream dispenser - fill halfway with the cheese mixture. Make sure your nitrous canister is loaded and give the whole thing a little shake.

Check for spray consistency by testing on a plate. Once ready, spray on!
