Start by steaming the eggs for 15 minutes and placing them into an ice bath immediately after.

Peel, cut in half and separate the yolks from the eggs.

To the yolks, add in the mayo, white vinegar, grain mustard, onion powder, and celery salt. Mix together.

Optionally scoop mixture into a piping bag and pipe into the center of eggs, or scoop into eggs via a spoon.

Sprinkle with paprika and refrigerate until ready to use.

In a large bowl, mix together ground beef, breadcrumbs, eggs, and spices.

Roll into individual balls and place on a wire rack set in a baking sheet.

Bake at 375°F for 15-20 minutes.

Toss meatballs into the desired sauce and place on the stovetop for 45 minutes.

For the Spanakopita

1.

Start by sauteing spinach in hot butter.

Once wilted, add in crushed garlic cloves and saute until shrunken.

If still too large, dump out onto a cutting board and chop to the desired size.

Add in chopped dill and feta cheese.

Lightly butter and stack the filo dough. Slice into 3” wide 12” long segments.

Place 2 Tbsp of filling to the top. Fold into a triangle.

Preheat the oven to 375°F. Brush the top of the triangles with melted butter.

Bake for 20-25 minutes.

For the Sandwich Assembly

1.

Slice the desired bread in half, scooping out half of the bread from each slice.

Add in the meatballs, top with spanakopita, and deviled eggs.
